Baked Pierogi of St. Hyacinth (Pieczone pierogi św. Jacka)
Introduction: These small golden pierogi are associated with Nockowa in Poland’s Podkarpackie region. Their firm wheat-and-twaróg dough surrounds a savoury filling of cooked cabbage and mushrooms, and a fork-crimped edge gives each half-moon its handmade finish.
The Polish Ministry of Agriculture includes Pieczone pierogi św. Jacka on its national Lista Produktów Tradycyjnych. Its description identifies 5–6 cm pieces, an ellipsoid shape, a golden exterior, a grey filling and a cabbage-and-mushroom flavour. The ministry also records a local origin legend, in which wheat and curd cheese make the dough and cabbage with mushrooms becomes the filling.
The legend is folklore rather than verified medieval history, and the official entry does not give household quantities or oven settings. This practical six-serving version follows the documented ingredient identity and appearance, while using measured quantities, cultivated mushrooms and a reliable oven method. It is a home interpretation, not a claim to reproduce an exact local producer’s formula.
For the best texture, cook the cabbage until tender and sauté the mushrooms until their released liquid has evaporated. Cool the filling before shaping so the dough seals cleanly. Make the pierogi small, press the seam firmly with a fork, and bake until the dough is set and evenly golden.
