Jacentów Cabbage Barszcz (Jacentowski barszcz z kapustą)
Jacentowski barszcz z kapustą is a pale, creamy Polish soup from Jacentów in the Świętokrzyskie region. It is built on sauerkraut and smoked pork broth, with slices of smoked sausage, garlic, marjoram and a light sour-cream-and-flour thickener. “Barszcz” here does not mean red beet soup: the traditional Jacentów version is ivory-white, mildly sour and marked by the aroma of smoked pork.
The Polish Ministry of Agriculture’s traditional-products entry places the dish in Opatów County, at the foot of the Świętokrzyskie Mountains. Its account describes cabbage as an important rural staple and sauerkraut as the base of this filling everyday soup. Older versions were cooked on bones; sausage or bacon came later. The documented serving includes a hard-boiled egg, with fluffy potatoes and cracklings alongside. It was once an inexpensive breakfast and is also made for larger celebrations.
This measured home version serves six. It uses smoked pork bones, smoked country sausage, a little dried mushroom and the traditional flour-and-sour-cream liaison. Each bowl gets one quartered egg, while boiled potatoes with crisp bacon cracklings are served separately. The soup should stay pale and creamy, thick but pourable. Cool leftovers promptly and keep them refrigerated; dairy-enriched soup is not shelf-stable.
