Kiełbasa z grilla z cebulą: Polish grilled sausage with onions
Kiełbasa is one of the best-known Polish meat products, and grilling or roasting sausage over a fire is a familiar warm-weather way to serve it. The family includes smoked, dried, boiled, ready-to-eat and fresh uncooked sausages. Marjoram and garlic are common Polish seasoning notes, though recipes and commercial products vary. This recipe focuses on a practical grilled serving with onions, bread and mustard, while spelling out that the selected sausage is fresh and raw so the cooking method and safety check are unambiguous.
Gentle, indirect heat helps the sausage cook evenly. A two-zone grill lets you brown the casing without holding it over open flame or causing flare-ups. Avoid cutting deep slits: they can let juices escape. A few shallow diagonal scores help the casing expand, but they are optional. Cooked onions add sweetness and moisture; keeping them in a covered pan on the cooler side of the grill makes them tender without scorching.
The sausage’s salt and seasoning vary by producer. Taste the onions before adding salt, and check the package for allergens such as wheat, milk or soy. Use one set of tongs for raw sausage and a clean set or freshly washed tongs for cooked food. Warm bread and mustard are ready-to-serve accompaniments, so keep them away from anything that touched raw meat.
