Kluski śląskie (tzw. biołe kluski): Opole Silesian Potato Dumplings
Kluski śląskie, also called biołe kluski in parts of Opole Silesia, are pale potato dumplings shaped into flattened rounds with a shallow dimple in the center. The Opole tradition describes them as soft, cohesive and slightly slippery, with a gentle potato aroma. This home version makes 24 larger dumplings, about 5 cm wide and up to 2.5 cm tall, matching the common size described for the regional style.
The Ministry of Agriculture's traditional-product entry describes the recipe as one passed through families and served at Sunday meals, weddings, christenings, communions and holidays. Opole accounts distinguish these white dumplings from black or grey dumplings that include raw grated potato, as well as other regional potato and flour dumplings. The measured version here uses cooked potatoes, potato starch, salt and one egg, an ingredient combination documented in Opole regional cooking; family recipes vary, and egg is not universal.
Serve four dumplings per person as a warm side with meat gravy, Silesian or Opole roulade and cabbage. Their shallow wells hold sauce, while melted butter, fried onion or bacon are other regional accompaniments. The dumplings themselves are simple and mild, so they also work alongside a stew or other sauced main dish.
