Kujawy Pierogi with Sauerkraut and Mushrooms (Kujawskie pierogi z kapustą i grzybami)
Soft Polish half-moon dumplings with a dense, savoury filling of tangy sauerkraut and dried forest mushrooms, finished with golden fried onion.
Kujawskie pierogi z kapustą i grzybami are a regional Kujawy preparation of Poland’s beloved filled dumplings. The registered version is described as delicate, lightly salted, pale dough folded into half-moons around a dense, aromatic filling of sauerkraut and mushrooms. The dish is associated with holiday tables in Kujawy, including Christmas Eve.
This practical home recipe makes 36 medium pierogi. Dried mushrooms are rehydrated and cooked, then combined with slowly softened sauerkraut and onion. A little cold-pressed flaxseed oil goes into the filling off the heat, reflecting the regional recipe’s flavour, while the topping onion is fried separately. The registration establishes the dish’s regional identity and characteristics, not one exact household formula; cabbage-and-mushroom pierogi are also made in other parts of Poland.
For a tidy, tender result, keep the cooked filling moist but not wet, leave the edges of each dough round clean, and press out trapped air before sealing. Boil the dumplings in batches so they have room to move, then serve them hot with the golden onion topping.
