Pasztet z karpia z żurawiną z Bełżca: Polish carp and cranberry pâté
This baked carp pâté is shaped into a small rectangular loaf, browned on top and flecked with dark cranberry pieces. The fish stays savory and tender, while the cranberries add a gentle sweetness. Chickpeas and hard-boiled eggs help the mixture hold together as a soft but sliceable pâté.
The Polish Ministry of Agriculture’s Traditional Products List records Pasztet z karpia z żurawiną z Bełżca as a ready dish from the Bełżec area of Lubelskie. The registered description notes a lightly browned rectangular loaf, usually around 400 g depending on the mold, with a dark beige interior, visible burgundy cranberry and a fish-and-herb aroma. It connects the dish with local fish farms and family gatherings. The registry does not prescribe exact quantities or the first-stage fish roasting time.
The documented method roasts carp with onion, garlic and herbs, then combines the cooked fish with chickpeas, hard-boiled eggs and cranberries before seasoning and baking the mixture for 30 minutes at 190°C. This measured home version makes two small loaves and uses boneless fillets for easier handling. It follows that sequence without claiming to be the one definitive historic formula. Because homemade pâté is not shelf-stable, keep it refrigerated after serving.
