Pierogi dębnickie z jagnięcymi podrobami — Dębnica Kaszubska lamb-offal pierogi
These small half-moon dumplings come from Dębnica Kaszubska in the Pomorskie region of northern Poland. Their defining filling is lamb lung, traditionally cooked with aromatics, minced with vegetables and tucked into a tender dough with a crimped edge. This measured home version adds lamb heart, sweet cabbage and a little semolina so the filling stays soft but is easy to portion.
The dumplings are about 5 cm across, with a narrow ruffle around the sealed edge. That small size is part of their character: the dough should be thin and tender, while each bite still contains a distinct, mildly savoury filling. Rosemary and summer savory season the lamb without overwhelming it; fried onion and butter are the simple finish.
Traditional household methods vary, and the regional description does not prescribe one fixed set of weights. Here, lungs remain the main offal and heart is the supporting cut. The offal is soaked in cultured buttermilk in the refrigerator, simmered until tender, then coarsely minced with cooked vegetables. Treat the yield and quantities as a practical home adaptation rather than a single definitive formula.
