Pierogi lipniackie z kapustą i grzybami: cabbage and mushroom dumplings from Lubelskie
These small, soft pierogi are filled with tangy sauerkraut and dried forest mushrooms, then sealed with a narrow braided edge. The measured home version below makes 36 dumplings, each about 5–7 cm across, in the style associated with Lipniaki in the Lubelskie region.
The Polish Ministry of Agriculture’s Traditional Products List records Pierogi lipniackie z kapustą i grzybami as a ready dish from Lubelskie. Its description notes a semicircular shape, a white wrapper, a beige-brown filling, and a cabbage-and-mushroom aroma. It also places the local pierogi tradition at least in the early twentieth century. A regional-products booklet describes slowly braised sour cabbage, dried mushrooms sautéed with onion, dough scalded with water, and a braided seam. The precise amounts here are a practical home adaptation, not a definitive historical formula.
Scalding the flour with boiling water makes a soft, pliable dough that is easy to roll thin and seal. The filling combines the sour bite of cabbage with earthy mushrooms and sweet, softened onion. Drain and braise the cabbage until tender and almost dry so the dumplings stay closed in the pot.
