Pieróg postny ze Starych Kolni: Opole Lenten Potato and Buckwheat Pie
Pieróg postny ze Starych Kolni is a single round, filled yeast pie from Stare Kolnie in Opole Silesia. It is not a plate of small pierogi. The local version has a golden-brown crust and a soft, pale potato filling flecked with dark buckwheat; a small opening in the top lets steam escape as it bakes.
The regional account connects this pie with families who came to Stare Kolnie from the Tarnopol area after the Second World War. It was traditionally baked on Holy Thursday and eaten through Holy Week, and at Easter it could stand in for bread. This measured home version follows a regional Opole recipe scaled to one pie about 22 cm across. The yeast dough is rolled and used without proofing, while the raw buckwheat cooks in the moist filling inside the pie.
The pie itself is meatless and dairy-free, so it can be served as a fasting main dish. Serve it warm or cooled, plain or with a separate mushroom sauce. Sour cream and cracklings are documented accompaniments, but they make the meal non-fasting and are not part of this recipe or its nutrition estimate.
