Pilzno Meat Pierogi (Pierogi z mięsem pilzneńskie)
Introduction: These small Podkarpackie pierogi wrap tender wheat dough around finely minced cooked beef, browned onion and a little pork fat. Each half-moon has a hand-crimped ruffle and a compact, savory filling.
The Polish Ministry of Agriculture lists Pierogi z mięsem pilzneńskie as a traditional product from Pilzno. Its description gives pale, soft dumplings about 25–30 g each. It connects the local product with beef and special occasions, while the historical recipe it quotes uses cooked broth or roast meat with pork fat, breadcrumbs, egg and onion browned in butter.
This measured home version brings those documented strands together: braised beef forms the main filling, and a small amount of cooked bacon adds the pork-fat element found in the older formula. It is a practical interpretation, not a claim to reproduce one household’s exact recipe. The dumplings are named for Pilzno; the recipe does not claim that its supermarket beef came from the young cattle described in the regional listing.
The filling must cool before the beaten egg is mixed in. Once shaped, cook the pierogi in batches and check that the center of a test dumpling reaches 71 °C / 160 °F. Serve them hot with cooked bacon and browned onion, in keeping with the source’s generous rendered-fat finish.
