Starokornickie Cheese-Filled Crepes (Naleśniki starokornickie)

Introduction: These Mazovian crepes are filled with sweet Polish twaróg, folded into neat triangles, and pan-fried until golden with a softly caramelized edge.

Naleśniki starokornickie come from Stara Kornica in the Mazowieckie region. The registered pancakes are folded around a sweet white-cheese filling and have a fairly substantial texture, with vanilla and cinnamon in the flavor profile. Their surface ranges from pale brown to golden yellow, and the white cheese shows at the cut edge.

A local household recipe enriches the batter with yolks, melted butter, and whipped egg whites. Ground white cheese is mixed with more yolks, sugar, and vanilla; the crepes are filled, folded into triangles, and browned in oil or butter. This measured home version keeps that method and adds a small amount of cinnamon. It is practical kitchen guidance, not an exact formula from a registered producer.

Make a light, pourable batter and let it rest while you mix the cheese filling. Cook eight thin crepes, spread each with filling, and fold it into a compact envelope. Fry the filled crepes gently on both sides until golden and the egg-containing centre reaches 71 °C. Serve two per person, warm or chilled, with sour cream on the side if you like.

Tips

Tips

  • Use smooth, pasteurized twaróg or farmer cheese that is moist but not runny.
  • Bring milk and eggs close to room temperature so the batter mixes smoothly.
  • Rest the batter for 10 minutes, then fold in the whipped whites gently.
  • Keep the cheese-and-yolk filling refrigerated until you are ready to assemble.
  • Use only a thin film of oil or butter in the pan so the crepes brown instead of soaking up fat.
  • Fold the filled pancakes into compact triangles or envelopes and start frying seam-side down.
  • Check the centre of a filled crepe with a thermometer; the egg filling must reach at least 71 °C.

Directions

  1. Mix and rest the batter.Whisk flour and salt in a bowl. In another bowl, whisk milk, water, two egg yolks, and cooled melted butter. Gradually whisk the liquid into the flour until smooth and pourable. Rest for 10 minutes.

  2. Whip the whites and make the filling.Beat the two egg whites to soft peaks and gently fold them into the rested batter. Mash or grind the twaróg until thick and smooth; mix in four cold egg yolks, sugar, vanilla, and cinnamon. Keep the filling refrigerated until assembly.

  3. Cook the crepes.Warm a 20–22 cm pan over medium heat and wipe it with a very thin film of oil or butter. Pour in about 80 ml batter and swirl to coat the pan. Cook until the top looks set and the underside is lightly golden, about 1–2 minutes; turn and cook 30–45 seconds. Repeat to make 8 crepes, greasing lightly as needed.

  4. Fill and fold.Spread about 50–55 g cheese filling over each crepe, leaving a narrow border. Fold the sides inward, then fold again into a compact triangle or envelope. Keep the folded crepes seam-side down as you finish the batch.

  5. Brown the filled crepes.Add a thin film of oil or butter to the pan and set it over medium-low heat. Fry the crepes seam-side down first, then turn and brown the other side, about 2–3 minutes per side. Lower the heat if they brown too quickly.

  6. Check and serve.Insert a food thermometer into the centre of a thick crepe; the egg-containing filling must reach at least 71 °C. Continue cooking gently and recheck if needed. Serve two per person, warm or chilled, with sour cream on the side if desired.
