Oberiba na gęsto: Thick Opole Kohlrabi with Dill
Oberiba na gęsto is a traditional vegetable side from Opole Silesia. Oberiba is the regional name for kohlrabi, and na gęsto describes its thick, spoon-coating finish. The regional dish is built around diced kohlrabi gently stewed with onion and butter, then finished with dill and a little flour.
This practical home version adds a small amount of carrot, matching the pale-green and orange appearance described in the Polish traditional-product record. Tender young kohlrabi leaves are optional when available. The cubes should become soft enough to bite through while holding their shape; the light sauce should cling to them without turning gluey.
Serve it hot as a vegetable side. The documented Opole pairing is mashed potatoes and meatballs, but neither accompaniment is included in this four-serving recipe or its nutrition estimate. This measured adaptation is not a claim to reproduce one protected household formula.
